
Underground Meats is based in Madison, WI and plays a major role for the rest of the Underground Food Collective's businesses. These products (and more) are available as prepared items at our restaurant Forequarter, packaged goods at our storefront Underground Butcher, and at many other food markets in the Southern Wisconsin.
TIPS FOR YOUR MEATS:
Think of cured meats like cheese: they are best kept refrigerated. Although they are considered to be shelf stable, unrefrigerated cured meats (like cheese) may begin to diminish in quality after a week or so depending on conditions, whereas refrigerated cured meats will be good for several months. Store in a plastic bag to keep the meat from drying out or oxidizing. Serve at room temp for best flavor and texture.
A NOTE ON MOLD:
A powdery dusting of benign white mold helps to cure the salami evenly while fending off bad bacteria.
It is safe to eat, or the casing can be removed before eating.
